Global actions can't update a record. Only object-specific actions I checked my Org (Setup -> Global Action -> new -> not action type(update record)) only action types (Create a Record, Send Mail, Log a Call, Custom VF, LC, LWC)

This is from the help article: "You can add global quick actions to almost any page that supports actions. Use global actions to let users log call details, create or update records, or send email, all without leaving the page they’re on. B Update a record. Global Actions are not Tied to a specific object.

But be aware that global actions can't update a record. Only object-specific actions can do that.
