To roll back a canvas app to a previous version, you can restore the previous version of the app. You can also deactivate the live app, import the previous version of the app, and then activate the app. Deleting the app and creating a new app based on the previous version is also an option. However, restoring the previous version of the app is a more straightforward approach.
