As per this link, process isolation is only available when the os of the host and the container guest match. https://unrealcontainers.com/docs/concepts/windows-containers#:~:text=Process%20isolation%20mode%20is%20only,the%20Kernel%20version%20compatibility%20section.

why not --isolation=process ? should be possible to run also with this switch.

because there is a mismatch between host and image so no isolation "process" mode available
