Hashing would render the data unreadable and unable to revert back to original state. So we would not be able to perform data discovery.

Not entirely true, hashing is data integrity check. A hash is appended to data for receiver to verify the data has not been tampered, hashing doesn't alter data but encryption does make data unreadable.
